A steward or shift lead on a hotel dish line, canteen pot wash, or cloud-kitchen prep floor sees water on tile and one mat soaked by the lunch sitting. The spare has to go down before the next sitting. Cleaning stays lift, hose, dry, rotate.

Water through the grid
A flat cushion mat does not belong where water has to pass through the walking surface. In a dish pit, pot wash, or vegetable wash, water needs a path through the mat. An open-grid S mat gives that path. Cushion Maxx (15 mm) stays the commercial doormat. Door mats are for small offices and homes. See door mats.

SMat Hydra is 7 mm Industrial PVC in 12 × 1.22 m rolls. SMat Ultra is 5.5 mm Industrial PVC in 12 × 1.22 m rolls. ENDURA is 12 mm HD Industrial PVC in 9.15 × 1.22 m rolls. ENDURA is not supplied as a 12 × 1.22 m roll. Cut the roll to the wet zone and keep it clear of drains, door swings, and trolley paths.
Spare mat between sittings
Dussehra and Diwali service fills a mat faster. It does not call for a new cleaning job. Keep one spare of the same family already on that floor. Lift the soaked mat, hose it, dry it, and put the spare down so the pit is never bare. That is lift, hose, dry, rotate.
What not to do
- Do not put a cushion mat where water must drain through.
- Do not call the S mat a wet-only mat. It is the first-zone dust-capture mat at a commercial entrance, and it is also used on wet floors.
- Do not leave the pit bare while the only mat is washed. Rotate a spare of the same family.
- Do not treat a commercial entrance as a kitchen floor. Commercial entrances use cushion, rib, and S mat.
